Week 45 – Vegetarian

Vegetables?? Yuck!

Kidding, kidding.  I think most vegetables can be great if you prepare them correctly.  Some just need a little salt and pepper, others a little roasting in the oven, and broccoli, a nice light steam…and some salt, pepper, butter, cheese, breadcrumbs, maybe a dash of hot sauce, some garlic…ok, so broccoli needs a bit more help.

This week, tacos!  I think a great way to go vegetarian, since most to all of the toppings on a taco are already veggie friendly.  Then instead of ground beef, I used chopped up yellow squash and zucchini.

filling: yellow squash, zucchini, onions, mushrooms
seasonings: garlic, onion powder, paprika, cumin, chili powder
toppings: black beans, sour cream, cheese, salsa, hot sauces

I actually do love broccoli too.
