Week 30 – Burgers

Burgers! Yum!

For this week, I wanted to do a twist on Indian food.  I used ground chicken and made a chicken curry patty.  Topped it with provolone and fresh spinach (a little spin on palak paneer).  I made a “chutney” with roasted onions and peppers, and then tossed in a fresh jalapeno when I blended it all together.  It add the perfect amount of heat.  Had a side of roast potatoes done with some typical aloo seasonings.

Some before and after shots.  This ended up being a really simple dish as I had all the seasonings on hand, it was a matter of prepping most of the items, and then just cooking up the burgers when everything was almost ready.

For the chicken:

  • 1lb of ground chicken
  • 1 egg
  • curry powder (I pan fried it up a little with some olive oil to really bring out the flavor.  It also really makes it aromatic!)
  • turmeric powder
  • paprika
  • cumin
  • garlic powder

For the potatoes:

  • cubed up red potatoes (but I’m sure you can use any)
  • turmeric powder
  • coriander powder
  • cumin
  • papaika
  • minced up some garlic
  • rosemary

The “chutney”: (Just roast the onion and pepper with some oil, salt, and pepper.  Then blend it together with the jalapeno.)
